The Ned Doha, a hotel and private members' club, is pleased to announce the appointment of Lucas Bonnaud as its new Executive Pastry Chef. With nearly two decades of experience in the pastry world, Lucas’s journey has led him through establishments such as The Savoy Hotel in London, the 2 Michelin star restaurant Sketch by Pierre Gagnaire, and Patisserie Riederer in France. Most recently, he held the position of Executive Pastry Chef at the Mandarin Oriental Doha.
"Growing up, I was deeply influenced by the French pastry traditions my grandmother cherished. This family heritage, coupled with my brother's culinary journey, guided me towards a career in the industry," Chef Lucas reflected. "I began my journey with basic training and gradually found my calling as a chocolatier, an adventure that took me to London and beyond."
Chef Lucas continued, "My path has taken me to quaint cake shops, reputable Michelin-starred restaurants, and renowned five-star hotels. Each experience has been a learning opportunity, helping me appreciate the diverse culinary cultures and refine my skills.”
He concluded, "I strive to stay true to the authentic flavours and textures that first inspired me, while embracing modern techniques and artistic presentation. For me, each dessert is not just a dish, but a personal expression of my love for pastry and a tribute to the traditions that shaped me."
Lucas is renowned for his specialisation in chocolate work, fine dining pastry production desserts, afternoon tea pastries, and special occasion cakes.. He has consistently demonstrated his dedication to crafting desserts that leave a lasting impression on guests. His arrival brings an exciting new chapter for the hotel's dessert creations.
